Ingredients:

3 eggs

Salt to taste

½ tsp red chilli powder

½ tsp ground black pepper

½ cup cornflour

1 cup bread crumbs

¼ cup Milk 

½ cup oil for deep frying

Method:

Take a large bowl that's safe to use in a microwave, and add eggs, salt, red chilli powder, and ground black pepper. Whisk the mixture thoroughly. Microwave the bowl for 2-3 minutes. Once done, remove the bowl and allow it to cool. Cut the cooked eggs into finger-sized pieces. First, coat each piece with cornflour, then dip it in milk, and finally, coat it with breadcrumbs. Repeat this process for all the egg pieces. Heat oil in a frying pan, and fry the egg fingers until they turn golden brown in color.

2. Egg Kebab

Here’s how you can make egg kebabs at home. 

Ingredients:

4 eggs, boiled

½ onion, roughly chopped

2 green chillies

1 tbsp ginger, chopped

1 tbsp garlic, chopped

1 tsp red chilli powder

½ tsp coriander powder

½ tsp garam masala powder

½ tsp turmeric powder

½ tsp cumin powder

Salt to taste

½ tsp chaat masala

1 tsp corn flour

2-3 tbsp butter

1 tbsp coriander leaves, chopped

1 tbsp onion slices

1-2 lemon wedges

Method:

Prepare a paste by blending onion, ginger, garlic, and green chillies, and keep it aside. Grate the boiled eggs in a large mixing bowl, and add two teaspoons of the prepared paste along with red chilli powder, coriander powder, garam masala powder, turmeric powder, cumin powder, salt, chaat masala, coriander leaves, and cornflour. Mix all the ingredients well and shape the mixture into small balls. Heat butter in a pan, and shallow fry the kebabs until they turn golden brown. Serve the kebabs garnished with onion slices and lemon wedges.

Ingredients:

2-3 eggs

1 tbsp milk

Salt to taste

1 tsp ground black pepper

1-2 tbsp butter

1 small onion, chopped

½ capsicum, sliced

1 small tomato, chopped

2 green chillies

1 tsp red chilli powder 

½ tsp cumin powder

½ tsp soy sauce

1 tbsp ketchup 

Method:

Whisk eggs, salt, milk, and ground black pepper in a mixing bowl. Next, brush a frying pan with butter and place it on low heat. Pour the egg mixture into the pan and spread it evenly, then cover it with a lid and let the omelette cook over low heat for 5 minutes. Once cooked, transfer the omelette to a plate and cut it into thin strips, setting them aside. In another frying pan, add the remaining butter, chopped onions, capsicum, and green chillies. Fry them until the onions turn golden brown, then add chopped tomatoes, red chilli powder, cumin powder, and salt. Cook until the tomatoes have softened and the oil separates. Add soy sauce and ketchup, and cook until the excess moisture dries up. Finally, add the omelette strips, toss everything together, and your egg noodles are ready to be served.

A cooler cousin of egg roll, you can literally whip up this snack in under 10 minutes, if you have all the ingredients in place.  

Ingredients:

For crêpe

1 egg

¾ cup maida

¼ tsp baking powder

Salt to taste

1 cup milk

For egg filling

2-3 eggs

1 small onion, finely chopped

1 small tomato, finely chopped

1 tsp red chilli powder

¼ tsp turmeric powder

2-3 green chillies, finely chopped

½ tsp chaat masala powder

1 tbsp coriander leaves, chopped

3-4 tbsp oil

Method:

In a mixing bowl, combine eggs, chopped onion, tomato, red chilli powder, turmeric powder, green chillies, chaat masala, salt, and coriander leaves. Whisk the ingredients together until they are well combined, and set the mixture aside. In a separate bowl, mix all the ingredients for the crêpe batter until you have a smooth mixture. Brush some oil onto a frying pan, and pour a small amount of the crêpe batter into the pan, spreading it evenly to create a thin layer. Once the crêpe is cooked, pour the egg mixture on top of it, spreading it evenly, and cook for another 1-2 minutes. Once the eggs are cooked, flip the crêpe and cook the other side for another 1-2 minutes. Transfer the crêpe to a plate and roll it while it's still hot. Repeat the process with the remaining egg and crêpe batter to make more delicious crêpe rolls.

Ingredients:

4-5 eggs, boiled

1 tbsp oil

1 tsp red chilli powder

½ tsp turmeric powder

2 tsp cumin powder

1-2 green chillies, finely chopped

½ cup mint and coriander chutney 

Salt to taste

1 small onion, finely chopped

1 small tomato, chopped

2 tbsp grated cheese

¼ cup sev for garnishing

2 tbsp pomegranate pearls

1-2 tsp ground black pepper

2 tbsp coriander leaves, chopped

Method:

Begin by cutting the boiled eggs in half and setting them aside. Heat oil in a frying pan and add red chilli powder, turmeric powder, half a teaspoon of cumin powder, and green chillies. Mix the ingredients well and add the boiled eggs to the mixture. Add salt and cook for 5-6 minutes, or until both sides are well coated with the spices. To prepare the chaat, place the boiled eggs on a plate and top each piece with mint and coriander chutney, chopped onions and tomato, grated cheese, sev, and pomegranate pearls. Finally, garnish with the remaining cumin powder, ground black pepper, and chopped coriander leaves. Enjoy!
