Simple Maharashtrian Recipe: Kanda Pohe.
Kanda Poha is a dish that anyone can prepare to bring home the taste of Maharashtrian food. To prepare, take two cups of the thick poha and wash them well with water. Drain out the extra water and let the poha soften.
In a pan, heat oil and add mustard seeds, curry leaves, chopped green chillies, and peanuts. Once the peanuts are crunchy, add finely chopped onions and cook until they are soft. Add turmeric powder, salt, and a little sugar to taste. Mix in the softened poha and stir gently until everything is combined. Cook for a few minutes on low heat.
Finish the dish with fresh coriander and the zest of lemon. Also try adding freshly grated coconut for extra flavor.
